Ingrédients :
4 cups flour
1.5 cup luke warm water
1 pkg. 0.25 oz. dry powder yeast
2.5 cup sugar
3 cups Tahini
Exécution :
Wash hands first!!
Preparation of the dough: In a bowl mix 4 cups of flour, 1.5 cup of luke warm water and 1 pkg. 0.25 oz. of dry powder yeast.
Knead the dough by hand for 5 to 10 min. folding inwards.
divide into 3 balls. Cover with Saran Wrap and let it sit in room temp. for 45min- 1 hr.
Roll out each ball in to a large circle, feeding it small amounts of flour to avoid sticking to the working surface. Don't hesitate to powder the rolling pin with flour as well, as you're rolling out the dough.
Cover the surface of the circular dough with a cup of Tahini and spread it evenly on the dough, either with a brush or your fingers. Do the same with a cup of sugar and spread it evenly, covering the edges as well.
Make a hole in the middle of the dough and fold it outward until the circle takes the shape of a circular thick dough in the shape of a circle made with a rope. Cut into 4 even sections.
Each piece will be in the shape of a thick straight line. Fold in from one end into a spiral circular motion & fold the other end underneath the sprial ball.
Once again roll out the sprial shaped ball into a flat circular dough, allowing the filling (Tahini & sugar) to be encorporated evenly.
Bake on a cookie sheet for 10-11 min. in a 400 degree preheated oven. It's done when golden brown. It should be sweet, flakey and crunchy ! Enjoy, and bon appetit !
