Cut the courgettes in slices, if they are big half or quarter them.
Slice the mushrooms and fry them in the olive oil together with thecourgettes for a few minutes.
Add .the vegetable broth and let simmer for five minutes.
Add then the single cream and let simmer another 2 minutes.
Add salt and pepper to taste (Hardly necessary).

No need to mix it, you can serve it with the courgette pieces.
